Top Sirloin Steak

Top Sirloin Steak with Corn off the Cob, Sauteed Asparagus, and Baked "Fries"

Tip- when the cast iron pan is medium heat DO NOT ADD OIL - put the steak fat edge down in pan and let the fat render until there is about a tablespoon of melted fat and the pan has come up to high heat - then lay the steak down on it's side in the rendered fat - this adds a lot of flavor.
sear on both sides about 1 minute then place in 425 degree oven for about 10 minutes for rare- 15-20 for medium. let rest for at least 10 minutes.



Baked "fries"
just cut the potatoes thin, season them, and bake at 450 for about 25 minutes turning a couple of times
