Thursday Night
I enjoyed a cup of chili from Wendy's (200 calories) with the kids waiting for Brandon to get off work
Then we made Seared Scallops Snacks (no sides, just scallops - since it was late)
we bought 4 large sea scallops - so i cut 2 of them horizontially and left 2 whole - we enjoyed the cut ones better as well. remember to place on paper towel to get any moisture out
and sear on the higher end of medium-high heat for about 20-30 seconds each side
I tried a variety of seasoniong - curry and salt on 2, garlic pepper on 1, just salt and pepper on one, red pepper cajun on 1, and a special k8 blend (pepper, curry, ginger, and garlic) on one. - the best was...... curry and salt!
