Grilled Pizza

Grilled Pizza - a MUST TRY!!

Get toppings ready - we made a mushroom pizza and a chicken caprese pizza

i bought frozen premade pizza dough - let it thaw for 24 hours and then prepared it - cut into 2 halves, form a ball then pat or roll out on a pizza pan - i found using hands works better than a rolling pin - i could control the shape better - it takes a while for the dough to stretch out, but it does eventually

Brush will EVOO instead of Cornmeal - that way it won't stick to the grill
Place on a grill at about 350 degrees - this is tricky i held teh pizza pan and flipped it over onto the grill then brished that side with evoo

flip dough when the bottom has light grill marks and the crust isn't flimsy anymore
then start topping your pizza
start with sauce

then add cheese and your favorite topping - we made cheese bread with our leftover dough
close lid for about 5 minutes - when the cheese is melty and topping are slightly cooked they are ready

yummy pizza!

Gouda Stuffed Lamb Burgers

Lamb Burgers stuffed with Goat's Milk Smoked Gouda Cheese, Grilled Zesty Zucchini, and Herb Roasted Potato "Chips"
heat oven to 425 slice potatoes thin, toss in a teeny bit of evoo and garlic and herb seasoning - place on flat cookie sheet - wait until burgers are on grill to put in oven

in a bowl - mix together ground lamb, 1/2 tablespoon minced garlic, 2 tablespoons chopped fresh oregano and basil -- shred 8 tablespoons smoked goat's milk gouda
patty out 8 1/4 inch thick burgersplace 2 tablespoons of shredded cheese on one patty and top with another pinch together side to seal the pat into a circle - smush the center in a little for when it cooks it will be more even as it expands - continue until you have all burgers made
place on 350 degrees grill - uncovered - about 5-7 minutes on each side

when you flip the burgers, place zucchini on grill and turn the potatoes that are in the oven
turn zucchini every 2 minutes

place on a bun with lettuce, tomato, light garlic mayonaise, a little dijon mustard and enjoy!
BE SURE TO CUT BURGER BEFORE EATING -- STEAM BUILDS IN THE CHEESE POCKET AND WILL BURN YOU IF YOU BITE INTO IT

BBQ Chicken

BBQ Chicken, Boiled Red Potatoes, and Steamed Broccoli


wash potatoes and poke with a fork put in pot of cold water and bring to a boil, then turn down to low and simmer until tender


Heat grill to 350 - sprinkle bone in chicken parts with poultry seasoning, salt, and pepper
Grill closed for about 30 minutes - keeping an eye on it in case of flare ups. after 30 minutes turn 1/2 grill off and place chicken on the side that is off - brush with your favorite BBQ sauce -close lid-- grill another 10 minutes then baste again - grill until thermoter reads done.

Steam some broccoli, PLATE UP and ENJOY!

Shrimp and Scallop Curry Skewers

Shrimp and Scallop Curry Skewers, Grilled Squash, and Parmesan Stuffed Baby Portabellas

Skewer shrimp and baby scallops and dust with curry powder, salt, pepper, and a little garlic pepper


Grill on high heat about 1 and half minutes on each side - when the shrimp is pink - DO NOT OVER COOK -- when shrimp is done scallops will be done.
Half squash sprinkle with garlic herb seasoning and evvo - grill until slighty tender
Parmesan Stuffed Baby Portabellas:
heat oven to 400 - Mix together 1 part bread crumbs (i used panko) to 2 parts shredded parmesan, add in a teaspoon of fresh oregano and basil, 1/4 teaspoon garlic powder, and 1-2 tablespoons light evoo mayonaise.
take out stem of mushrooms turn upside down and stuff with mixture

bake for about 10- 15 minutes or until cheese is browned and melted.

Plate Up and Enjoy!

Broiled Salmon with Jalapeno Mango Sauce

Broiled Salmon with a Jalapeno Mango IPA Sauce, Spicy Black Beans, and Spanish Rice


Make Spanish Rice per box instructions
Spicy Black Beans: add 1 can black beans undrained, 1 tablespoon chili powder, 1 tablespoon cumin, a dash of red pepper, and a teaspoon of chile paste - bring to boil then simmer until ready to serve
Jalapeno Mango IPA Sauce:
in a large skillet add one bottle of beer, i used Sweetwater IPA, 1/2 jalapeno sliced, 1/4 cup fresh mango, 1 teaspoon powdered ginger, and one garlic glove gently smashed (so you can take it out). bring to boil until all carbonation is out and reduce heat to low and simmer until it reduces to a thickened sauce.

Tilapia Fail...

Indian Tilapia with Curry Cream Sauce (served with spicy black beans and broccoli)

I tried doing a little Indian influenced Tilapia with the spice Garam Masala - if you like cinnamon in your savory food, you probably would have enjoyed this - i however wasn't impressed. i'm glad i made a cajun piece too.

The curry cream sauce i made was pretty good - 2 tablespoons light sour cream, 2 teaspoons light mayo, 1 tablespoon curry, pepper to taste, and a little lemon juice.
this Indian tilapia was pretty good in a wrap with curry sauce, lettuce, tomato, and cilantro -- by it's self wasn't very good.
oh well - "you win some and you lose some"

Cajun Chicken

Cajun Chicken, Red Beans and Rice, Steamed Broccoli, and Fresh Sliced Tomatoes

I have previously posted this recipe - please refer to it - here are pics of the chicken.

Injected, marinated for 1-2 days, and rubbed with cajun seasoning
Baked almost 2.5 hours


Fell off the bone - we really din't need more than a butter knife.

Honey Soy Salmon

Honey Soy Salmon, Steamed Cauliflower, and Spicy Mashed Potatoes

in a large ziplock bag add 1/4 cup soy sauce, 1/2 cup honey, a couple of drops of sesame oil (optional) 2 tablespoons evoo, 1 teaspoon garlic powder, 1 teaspoon lemon pepper, 1 tablespoon ginger powder - mix together until smooth - add salmon - refrigerate at least 1 hour

heat oven to 400 degrees put salmon on pan and bake for 15 minutes then turn on low broil for 5 minutes - the marinade will burn on pan and smoke a little - just be prepared.


Make mashed potatoes and add in a teaspoon of ground red pepper or wasabi powder for a kick
steam cauliflower while salmon is broiling - garnish with a green herb and garnish salmon with a few sesame seeds and a lemon

Spicy Shrimp Pasta

Spicy Shrimp Pasta

Start boiling water for pasta - I used linguini, but any pasta will do

Start 2 inch sauce pan on medium heat - add one tablespoon evoo, 8 oz container of sliced portabella mushrooms, 1/2 a fresh jalapeno diced, 3 garlic cloves diced, salt and pepper - sautee until mushrooms are 1/2 cooked and brown - add in 1/4 cup chicken broth bring to boil - add in shrimp and cook about 30 seconds each side -- not cooked through - remove shrimp from pan - add in 1/2 cup of chicken broth, 1 block of cream cheese (i believe it's 8oz), and 2 tablespoons cajun seasoning- bring to boil and stir until all cream cheese has melted and the sauce is smooth - you can add in more chicken broth if it looks too thick, remember it will thicken when cooled too. - when sauce is smooth add shrimp back in for about 1 minute

you can either serve on top of pasta or toss pasta into sauce - garnish with a sqeeze of lime juice on top and some fresh basil and tomatoes

Easter Breakfast

Egg in a Basket, Bacon, Hash Browns, Honey Toast and a Mimosa


cut out hole in bread (cookie cutter) then toast one side of bread in pan with butter flip then add a pat of butter in hole when it melts add in one egg - wait until it is mostly cooked then flip one more time for over medium
toast up the cut out and top with butter and honey - serve with bacon and hash browns

My Healthy Alternative Breakfast:
Toast bread without butter, fill with a poached egg, honey only on toast (no butter) - sautee hash browns in water or spray evoo, NO BACON :)

Roasted Rabbit

Roasted Rabbit, Roasted Carrots, and feild Green Salad

The perfect meal for our Easter Lunch ....EASTER BUNNY! :)

I injected my rabbit with garlic herb marinade and refrigerated overnight. then i set the oven to 375 and put the rabbit and large pieces of cut carrot on rack salt and peppered all, sprayed the carrots with evoo - then baked for 30 minutes - then i turned the heat up to 450 and roasted for 15 minutes

Serve with a salad for the perfect lunch.

Lemon Garlic Panko Tilapia

Lemon Garlic Panko Tilapia, Wild Rice, and Roasted Sweet Potato Chips

Make wild rice per packaging instructions, but use 1/2 water and 1/2 chicken broth
Slice sweet potatoes very thin spray with cooking spray (evoo) place on pan and drizzle with a little local honey and a sprinkle of salt - Roast at 400 for about 25 minutes


heat 2 tablespoons evoo in pan on medium high heat add garlic but pull out before it turns black
season one side of tilapia with lemon and garlic pepper - season the other side by mixing lemon and garlic pepper into some panko crumbs - then dip that one side in chicken broth or water and then into the crumbs - place fish in pan crumb side down - then flip after about 3 minutes to cook the other side.
i panko only one side so you will have crunch and flavor - i find when i panko both sides of thin fish - it tends to taste more like a fish stick
